Just so you It's a great bread to have alongside a creamy, cold-weather soup or to enjoy as a breakfast bread with some good butter and jam. *makes 2 small or 1 massive loaf. Isn't it great knowing the bread that you eating has ingredients which you know and recognize and not one of them is sugar or chemical fats. 100% WHOLE WHEAT SANDWICH BREAD. I think I'm getting the hang of it! Just stir flour, water, yeast and salt and let sit for half a day. Keeps a long time (perhaps forever, I have not had any go bad, ever) and makes that nice, stretchy, elastic dough needed for great bread, even 100% whole grain breads. (adapted from a recipe from Paul Hollywood's 100 Great Breads). Sometimes it's best just to get to the gist of things, no beating around the bread, no getting overly fancy with something that is just this straight-forwardly awesome. 100% whole wheat version of Sullivan Street Bakery's crusty no-knead bread. I'm back with another installment of my Baking Outside My Comfort Zone series, focusing on yeast breads.
